2 medium carrots, diced
2 small zucchini, diced
2 cups cabbage, shredded
2 cups cauliflower florets
2 cups broccoli florets
2 medium fresh tomatoes, diced
1 cup green beans
1 can fire roasted diced tomatoes
1 medium onion, diced
1 medium red pepper, diced
1 medium yellow pepper, diced
6 cups vegetable broth (chicken or beef broth is great too!)
1 packet Healthy Solutions Perfect Steak spice blend
Combine all ingredients in a slow cooker. Cover and set temperature to low for 8-10 hours. It's that simple.
Notes: Add or leave out vegetables to suit your taste. Frozen vegetables work just as well. It's a great way to clean out your freezer!
To make on your stove top, combine all ingredients into a large soup pot. Cover and bring to a boi over high heat. Reduce head to low and simmer, partly covered, for 20-30 minutes.
