Chicken Burritos

Ingredients

1 lb chicken thighs or breasts
1 tbsp butter
2 tbsp olive oil
1 small onion, chopped
1 small green pepper, chopped
1 small red pepper, chopped
1 cup white or brown rice, cooked
4 tbsp Healthy Solutions Authentic Chili/Tacos blend
1 cup black beans, optional
Flour tortillas
1 cup Monterey Jack cheese, shredded
Salsa and sour cream, optional

Directions

Cut chicken into bite size pieces and place in a bowl or large ziplock bag. Add olive oil and Healthy Solutions Authentic Chili/Tacos blend. Mix until chicken is completely covered with the oil and spice mixture. 

In a large skillet, melt butter over medium-high heat. Add onion and peppers; stir and cook until until tender. Remove from skillet to a bowl.

Using the same skillet, add chicken and cook on medium heat until chicken is cooked through and juices run clear. Stir in rice, beans (optional), onions and peppers.

Spoon across the center of each tortilla, topping with shredded cheese. Fold bottom and sides of tortilla over filling and roll up.

Goes well with sour cream and salsa.
