Ingredients
1 lb. elbow or cavatappi pasta
1 quart whole milk
6 tbsp. unsalted butter
1/2 cup all-purpose flour
4 cups Gruyere cheese, grated
2 cups Cheddar cheese, grated
1 tbsp Healthy Solutions Shrimp Scampi spice blend
1½ lbs. cooked lobster meat
Directions
Preheat oven to 375℉. Cook pasta in large pot according to package directions. Remove pasta to colander to drain.
In a small saucepan, heat milk slowly, being careful not to boil it. In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring constantly with a whisk. Continue whisking while adding the hot milk and cook for 1-2 minutes, until thickened and smooth.
Remove pot from heat and mix in the cheese and Shrimp Scampi spice blend. Add the cooked pasta and lobster meat; stir well. Place the mixture in an oven safe baking dish (we love cast iron for this) treated with non-stick spray.
Bake for 30 to 35 minutes, or until bubbly and the top starts to brown.
Note: Shrimp or crab are can be substituted for the lobster.
