Portabello Mushroom Black Bean Burger

Direct from the HSSB Test Kitchen – A nice twist on your average veggie burger!

Ingredients:
2 cups portabello mushrooms, chopped
2 cups cooked black beans
1 cup broccoli, cooked and chopped
1/2 cup red onion, chopped
2 eggs
1/2 cup plain Panko breadcrumbs
4 tbsp Healthy Solutions Spice Blends Ultimate Burger
1/2 cup grated Parmesan
2 tbsp olive oil

Directions:
Place 1 cup of the black beans and remaining ingredients (except olive oil) in food processor. Pulse 5-6 times to mix. Don’t over mix or it may become too mushy. Place mixture in a large bowl and add remaining 1 cup of black beans.

Form burgers by hand. Add 2 TBSP of Olive oil to cast iron or nonstick plan and heat over medium heat. Add patties to the pan and cook each side for 2-3 minutes until browned and slightly crispy. Serve on a bun with your favorite toppings. We recommend lettuce, tomato, avocado.
