1 tbsp butter
1/4 cup white onion, very finely chopped
2 cups Cheddar cheese, shredded
1/2 cup fresh spinach
1 tbsp Garlic Lovers seasoning
1 13 oz can evaporated milk
1 14 oz can fire roasted diced tomato, drained
Melt butter over medium heat in a large saucepan. Add onion and cook until onion is translucent (not brown). Add spinach and cook for 1-2 minutes, until wilted. Stir in Garlic Lovers seasoning, evaporated milk and Cheddar cheese.
Reduce heat to low and continue to stir until cheese is completely melted. If sauce is too thick, add milk or water to desired thickness. The sauce will thicken as it cools.
Place dip into serving dish and top with fire roasted diced tomatoes. Serve warm or at room temperature
Notes: Fresh diced tomatoes may be substituted for canned. Frozen spinach, thawed and drained, may be substituted for fresh.
