2 ½ – 3 lb. whole roasting chicken
4 tsp. Healthy Solutions Lemon Pepper Scallops spice blend
2 tbsp. olive oil
Preheat oven to 375℉. Brush all sides of chicken with olive oil. Place chicken in a shallow baking dish or cast iron pan, prepared with nonstick spray. Sprinkle 4 tsp. Healthy Solutions Lemon Pepper Scallops onto chicken. Bake at 375℉ for about 20 minutes per pound or until thoroughly cooked. When done, the juices will run clear and the chicken will be white with no sign of pink.
