Succulent Pork Roast


3 pounds boneless pork loin roast
4 tbsp. Healthy Solutions Lemon Pepper Scallops
1/4 cup olive oil


Preheat oven to 350℉. Pat pork dry with paper towel. In a small bowl, combine the Lemon Pepper Scallops spice blend and olive oil. Apply to all surfaces of the pork. 

Place roast in a shallow pan and bake for 1 hour (20 minutes per pound), until internal temperature on a meat thermometer reads 145℉. Remove roast from oven. Allow to rest about 10 minutes before slicing.
