1 egg, slightly beaten
1/2 cup plain Panko crumbs
4 tbsp. Healthy Solutions Salmon with Dill
1 lb. flaked crab meat (about 2 cups)
2 tablespoons olive oil or butter
Red and green peppers, sliced
Black olives, broken into small pieces
Mozzarella balls, sliced
In a medium bowl, combine egg and Panko crumbs. Add Healthy Solutions Salmon with Dill. Mix completely. Gently fold in crabmeat. Shape into burgers.
Add olive oil to pan and spread to cover bottom. Pan-fry crab cakes for approximately 3 to 4 minutes on each side or until golden brown.
Place burgers on a plate. Use pepper strips to make legs and mouth. Use mozzarella and black olives for eyes.
