1 cucumber, sliced
5 radishes, sliced
2 tsp. Healthy Solutions Delicate Dill spice blend
1 lb. small red or new potatoes
1/3 cup olive or avocado oil
Cut potatoes into quarters. Place in a pot of water and boil until just tender. Drain and let cool to room temperature.
In a small bowl or measuring cup, combine oil and Healthy Solutions Delicate Dill spice blend.
In a large bowl, combine potatoes, cucumbers and radishes. Pour oil mixture over and gently mix. Serve at room temperature.
If made in advance, cover and store in refrigerator. Allow to come to room temp before serving.
Note: You can substitute mayo for the oil if preferred.
