Salmon and Zucchini Skewers


3 salmon fillets (about 1½ lbs.)
2-3 small zucchinis
¼ cup olive oil
1 tbsp. Healthy Solutions Salmon with Dill spice blend
6-8 wooden skewers


Soak wooden skew­ers in water for at least 20 minutes.

Meanwhile, whisk together the oil and spice blend. Cut salmon filets into chunks and set aside. Slice the zuc­chini into ¼"-½” rings and set aside. Skewer by alternating the salmon and zucchini onto the wooden skewers. Brush the oil and spice mixture onto all sides of the salmon and zucchini.

Pre­heat your grill to medium high. Place the skew­ers over the heat and cook for 3 minutes. Brush on any remaining oil mixture, turn the skewers, brush other side and continue cooking for an additional 2-3 minutes or until desired doneness.
