Pork Wings with Purple Ramen Slaw

Ingredients

Pork Wings 
1 lb. boneless pork chops
4 tbsp. Healthy Solutions Pork and Poultry Rub
1½ cups Panko breadcrumbs
2 tbsp. cayenne pepper
olive oil
4 tbsp. sriracha mayonnaise

Purple Ramen Slaw
½ red cabbage
½ red pepper, finely chopped
¼ red onion, chopped
3 medium carrots, grated
½ cup raw Ramen noodles
10 walnut halves, broken into pieces
½ cup blueberries
2 tbsp. pumpkin seeds
4 tbsp. toasted sesame oil
4 tbsp. sweet chili sauce

Directions

Purple Ramen Slaw:
Shred cabbage and place in a medium bowl. Add red pepper, red onion, carrot, noodles, walnut pieces, blueberries, pumpkin seeds. Add sesame oil and chili sauce and stir to mix well. Refrigerate until ready to serve.

Pork Wings:
Pre-heat oven to 425℉. Cut pork chops into bite-size chunks. Mix together Healthy Solutions Pork and Poultry Rub with breadcrumbs. Pour olive oil into a large resealable plastic bag. Add pork chunks to bag and massage to coat with oil. Coat with Pork and Poultry Rub and breadcrumb mix.

Place on a parchment lined baking tray and bake for about 20 minutes or until pork is cooked through and coating is nicely browned.

Serve with sriracha mayonnaise and Purple Ramen Slaw.
