Makes 6 servings
5-6 medium Red Potatoes, skinned and diced
2 tbsp. Healthy Solutions Cajun Seafood spice blend
6 Large Eggs
1 loaf buttermilk bread, sliced
4 tbsp. Garlic olive oil
3 large avocados, pitted and sliced
1 bunch Cilantro, chopped
Cajun Chipotle Lime Mayo:
1 cup Mayo
½ tbsp. Healthy Solutions Cajun Seafood spice blend
1 small lime, juiced
½ tsp. Chipotle Chili seasoning
In a medium size bowl, mix together the mayo, Healthy Solutions Cajun Seafood spice blend, lime juice and chipotle seasoning. Refrigerate until ready to use.
In a large skillet, add 3 tbsp. garlic olive oil and potatoes. Sprinkle potatoes with Healthy Solutions Cajun Seafood spice blend and mix well to insure that all potatoes are coated. Pan fry on medium-high heat until crispy on the outside and soft and meaty on the inside, about 20 minutes.
Lightly coat both sides of bread slices with garlic olive oil. Toast bread in skillet until both sides are golden brown.
In a non-stock skillet, add 1 tbsp. garlic olive oil and cook eggs over easy.
Arrange 2 pieces toast so they overlap each other on a serving dish, add ½ cup fried potatoes on top of bread, top with over easy egg. Garnish with avocado and chopped cilantro.
Use a piping bag or a spoon, drizzle Cajun Chipotle Lime Mayo over the entire Cajun haystack. Sprinkle top of finished haystack with additional Healthy Solutions Cajun Seafood spice blend, if desired.
