1 tbsp butter
1 tbsp olive oil
1 medium yellow onion, chopped
1 green pepper, chopped
1 packet Healthy Solutions Italian Meatballs spice blend
1 pound ground beef
1 pound rigatoni
1 (14.5-ounce) can fire-roasted diced tomatoes
1 small can tomato paste
1/2 cup Parmesan, grated
Preheat oven to 350℉. Make pasta according to package directions. Drain and set aside.
Add the butter and olive oil to a large oven-safe skillet over medium heat. Add the onion and pepper to the skillet and cook until soft, about 5 minutes. Add the ground beef and continue to cook, breaking up the chunks of meat with a spoon or spatula. Cook the meat until it is no longer pink. Mix in the entire packet of Healthy Solutions Italian Meatballs spice blend.
Mix the canned tomatoes, including the juice, into the skillet. Add the pasta to the meat mixture and mix to combine. Top with cheese.
Place skillet in oven for 20 minutes until hot and bubbly.
