Garlic Steamed Clams


1 lb. small-medium size live fresh clams in shell
1 tbsp. unsalted butter
1/2 cup water
1/2 cup white wine
1 tsp. Healthy Solutions Shrimp Scampi spice blend


Cleaning the Clams: You will want to clean the clams to remove sand. All cracked, damaged or open shells should be thrown away. Place clams in a large bowl or pot and cover them completely with cold water. Mix 2/3 cup of salt for each 8 cups of water. 
Allow to sit for about an hour then drain, rinse well to get rid of any loose grit. Repeat and rinse again, if needed, until clean.

Steaming the clams:
Add wine, butter and spices to a large pot and bring to a boil. Once the liquid starts to boil, add the clams.

Cover with a tight fitting lid and cook for 4 to 10 minutes, until shells open. Be careful not to overcook the clams. The best way to tell that they are done is to cook them just until the shells pop open wide.

Remove the clams from the steamer pot with a slotted spoon to a serving bowl. Serve with the broth from steaming and additional melted butter.

Notes: You should only eat the steamers that opened and discard any that stayed closed since they were dead before cooking.
