3 tbsp. olive oil
1 tbsp. butter
1 medium onion, thinly sliced
4 boneless chicken breasts
1 tbsp. Healthy Solutions Garlic Lovers spice blend
3/4 cup plain Panko breadcrumbs
1/4 cup Grated parmesan
2 roma tomatoes, sliced
Preheat oven to 375℉. Melt 1 tbsp. olive oil plus 1 tbsp. butter in an oven safe skillet on medium heat on the stove top. Cast iron works great for this. Add sliced onions to skillet and sauté until soft and lightly golden brown. Remove onions from skillet. Add 1 tablespoon of olive oil to the same skillet and brown the chicken for 1 minute on each side. Remove skillet from heat.
In a small bowl, mix together breadcrumbs, grated parmesan and spice blend. Top each chicken breast with sliced tomatoes. Generously spread breadcrumb/Parmesan mixture over tomato slices. Drizzle remaining tablespoon of olive oil over chicken so that the breadcrumbs will get crispy.
Place skillet in oven and bake for 35-40 minutes, until chicken is cooked through and topping is crispy.
