1½ lbs. tilapia or sole fillets (about 6 fillets)
1/2 cup cornmeal
1 packet Healthy Solutions Herb Crusted Tilapia spice blend
1 large egg, lightly beaten
1/3 cup all purpose flour
2 tbsp. olive oil
Lemon wedges, optional
Preheat oven to 375℉. Combine the cornmeal, flour and Herb Crusted Tilapia spice blend on a plate. Put the beaten egg in a separate bowl.
Dredge the tilapia fillets first in the egg, then the cornmeal mixture, covering each fillet completely on both sides.
Drizzle olive oil into an oven-safe skillet or pan. Cast iron works great for this. Add the fish and bake for 15-20 minutes, until fish is cooked through and crispy.
Serve with lemon wedges, if desired.
