Ground Pork Tacos

1 lb. ground pork (90% lean / 10% fat)
1 packet Healthy Solutions Authentic Chili/Tacos spice blend
1 medium onion, finely diced
1 medium green pepper, finely diced
2 tbsp. olive oil
8 corn tortillas (flour tortillas are fine too!)
Salsa verde
Cotija cheese, crumbled (Monterey Jack can be substituted)
Fresh lime, cut into 8 sections
Fresh cilantro, if desired

Drizzle olive oil into large skillet. Add chopped onion and pepper; cook on medium heat until they are soft. Add ground pork, breaking it up with a fork or spatula. Cook for 2-3 minutes; drain excess fat. Add packet of Healthy Solutions Authentic Chili/Tacos spice blend, mixing it in completely. Cook on medium heat for an additional 2 minutes to ensure that pork is cooked though.

Assemble the tacos starting with pork and vegetable mixture. Add salsa verde and cheese. Top with fresh lime juice and cilantro, if desired.

  1. These look so good I’m anxious to try them. I may use a pork roast slow cooked with the seasoning instead of ground pork. Either way I know the tacos will be delicious. Thanks for sharing the recipe.
