Tortilla Stackers

Ingredients

1 lb. ground beef
1 onion, chopped
1 packet Healthy Solutions Authentic Chili/Tacos spice blend
2 tbsp. olive oil
4 large flour tortillas (8" round)
1 cup canned black beans, rinsed and drained
1 cup cherry or grape tomatoes, diced 
1 cup Monterey Jack cheese, shredded

Directions

Preheat oven to 350℉. In a large skillet, heat oil on medium heat. Add onion and cook until just soft. Add ground beef and  Healthy Solutions Authentic Chili/Tacos spice blend, breaking up meat in skillet while cooking. When meat is cooked through, drain any excess fat from skillet. 

Coat a baking sheet (or 9" round cake pan) with non-stick cooking spray. Place 1 tortilla on baking sheet.  Spread ⅓ of the meat mixture evenly over tortilla to within a ½ inch of sides of tortilla. Top with  ⅓ cup of the beans, ⅓ cup tomatoes, ⅓ cup cheese. Continue layering tortillas and filling, finishing with the 4th tortilla. With your hands or a spatula, press down lightly on the tortilla stack, pushing the filling to the edge of the tortillas.
 
Bake uncovered for 10 minutes, until cheese is melted and tortillas start to crisp.  Cut into wedges.

Note: This is great topped with sour cream, guacamole and/or salsa.
