Oven Baked Tacos

lb. ground beef, chicken or pork
2 tbsp. olive oil
1 packet Healthy Solutions Authentic Chili/Tacos spice blend
1 medium onion, diced
1 can (14 oz) fire roasted diced tomatoes, drained
1 cup Monterey Jack cheese, shredded
12 flour tortillas or taco shells
Tomato, diced
Sour cream
Lettuce, shredded

Preheat oven to 375℉. In a large skillet, add oil and onion and cook over medium heat until onion starts to soften.

Add ground beef, chicken or pork and cook on medium heat for 2 minutes, breaking it up as you go. Drain any excess grease from the skillet.

Turn heat to low-medium. Add Chili/Tacos seasoning and fire roasted tomatoes, mixing in completely. Cook on medium heat for an additional 2 minutes.

Spray a glass 9x13 pan with non-stick cooking spray. Spoon taco filling into tortillas or taco shells and stack them side by side in pan. Top each with shredded cheese.

Bake for 5-8 minutes in preheated 375℉ oven. Remove from oven when cheese is melted. Add toppings as desired.
