4 boneless skinless chicken breasts
2 tbsp.salted butter, melted
2 tbsp. olive oil
1 packet Healthy Solutions Herb Crusted Tilapia
4 thin slices deli ham
4 thin slices Swiss cheese
2 large eggs
1/2 cup milk (whole or skim)
1/2 cup all-purpose flour
1 cup plain Panko bread crumbs
1/4 cup Parmesan cheese, shredded
Preheat oven to 350℉. Flatten chicken breasts to 1/8" thickness. Top each chicken breast with one slice of ham and one slice of Swiss cheese. Roll the chicken breast tightly, using toothpicks to secure them.
In a small bowl, beat together eggs and milk. Place flour in another bowl. Combine the bread crumbs, packet of seasoning and cheese. Dip each chicken breast into egg mixture; dip into flour to coat. Dip each again into egg mixture, then coat with crumb mixture.
Mix butter and olive oil together and drizzle onto a baking sheet. Place chicken onto baking sheet and bake uncovered for 40-45 minutes or until chicken is fully cooked and juices run clear.
