5 lb beef roast
1 packet Healthy Solutions Bold Beef Rub or Prime Rib Rub
3 tbsp olive oil
Bring roast to room temperature. Generously rub the roast on all sides with seasoning. This will give it a deep black crust that seals in the juices.
Add oil to a large skillet and heat to medium/high heat. Brown the roast for 1 minute per side.
Prepare a shallow roasting pan with cooking spray. Transfer the roast to the roasting pan, fat side up.
Preheat oven to 425℉. Prepare a shallow roasting pan with cooking spray. Place meat in pan fat side up. Rub seasoning onto all sides of meat. Roast uncovered in oven for 10-15 minutes per pound.
Remove roast from oven and let rest for 15 minutes. It will continue to cook while resting. Use an instant read thermometer for desired doneness. Rare
120-125℉, Medium Rare 130-135℉, Medium 140-145℉, Medium Well 150-155℉, Well 160℉ and above.
