Loaded Meatball Sub


Meatballs (makes 30-40 meatballs):
1½ lb. ground beef
2 eggs, beaten
¼ cup milk
⅔ cup plain bread crumbs
1 tsp. lemon juice
3 tbsp. grated Parmesan
1 packet Healthy Solutions Italian Meatballs
For Sandwich:
Sub rolls
Tomato sauce
Sliced black olives
Red onion, thinly sliced
Pickle chips
Provolone cheese, sliced
Banana peppers
Tomato, sliced


To make meatballs: Preheat oven to 375℉. Mix together all ingredients for meatballs in a large bowl. Spray a cookie sheet with non-stick cooking spray. Form meatballs into 1" balls. Place on cookie sheet and bake for 8-10 minutes, turning once.

Sandwich: Slice and toast rolls. Layer lettuce leaves, tomato, red onion, pickles, meatballs, sauce, cheese, tomato, banana peppers, black olives. Top with additional sauce, if desired.
