Sesame Ginger Chicken Meatballs


1 lb. ground chicken or turkey (85% lean)
1/2 cup plain Panko bread crumbs
1 large egg
1 celery stalk
1/2 small onion
1 scallion stem
2 tbsp. Healthy Solutions Sesame Ginger Tuna spice blend
2 tbsp. soy sauce
1 tbsp. honey
2 tbsp olive oil
For topping:
1 scallion, 1/2 cup soy sauce, 1 tbsp Healthy Solutions Sesame Ginger Tuna spice blend 


Preheat the oven to 450°F. Place 1 celery stalk,  1/2 onion and 1 scallion stem into food processor and pulse until finely minced.  Remove from food processor and place into large bowl. Add ground chicken or turkey and remaining ingredients (except topping ingredients) and mix together.

Drizzle olive oil onto a baking sheet.  Form meat mixture into 1”  meatballs and place onto the baking sheet.  Bake for 12-14 minutes, until meatballs are browned and cooked through.  Remove from oven to a platter.

Mix topping ingredients together and pour over meatballs before serving.
