8 loin lamb chops
½ cup olive oil for marinade
1 tbsp. olive oil for pan
1 packet Healthy Solutions Perfect Steak spice blend
Mix ½ cup olive oil and entire packet of spice blend together into bowl or zipper seal bag. Add lamb chops and marinate for 3-4 hours or overnight.
Remove lamb chops from refrigerator and allow to come to room temperature (30 minutes to an hour) before cooking.
Preheat oven to 400℉. Heat 1 tbsp. olive oil on high heat in a large oven-safe skillet. Cast iron works great but any oven-save skillet will work. Add lamb chops to skillet and sear for 1 minute per side.
Place skillet in 400℉ oven and roast for about 10 minutes for medium-rare.
Remove chops from pan to serving platter and cover with foil to rest for 10 minutes. The lamb will continue to cook while resting so remove the lamb from the oven before it is fully cooked to your desired doneness.
Notes: Check meat temperature with an instant-read thermometer - Rare 130˚F, Medium Rare 135˚F, Medium 145˚F, Medium-Well 160˚F, Well Done 165˚F
