1 package riced cauliflower, fresh or frozen
4 tablespoons butter, melted
1/4 cup sour cream
2 tsp Healthy Solutions Garlic Lovers spice blend
1/4 cup parmesan cheese, finely shredded
Cook cauliflower based on package directions. Remove and drain well. If microwaved, you will not need to drain it. Place cooked cauliflower into food processor. Pulse while adding remaining ingredients until smooth. Top with butter and additional cheese if desired. Serve hot.
Notes: This recipe is not low calorie or low fat, but it is low carb. You can easily swap out higher fat ingredients for their lower fat version.
