Tuna Pasta Bake

Ingredients

1 box (12 oz) penne or other shaped pasta
1 cup  mushrooms, sliced
½ cup peas
½ cup corn
½ cup onion, chopped
2 tbsp. Healthy Solutions Shrimp Scampi spice blend
2 cans (3oz each) tuna
½ cup sour cream
1 cup cheddar cheese, grated
1 cup plain Panko breadcrumbs
3 tbsp melted butter
Non-stick cooking spray

Directions

Preheat oven to 375°F. Cook pasta according to package directions to al dente. 

Meanwhile, melt 1 tbsp. butter to a skillet and add mushrooms, peas, corn, and onion. Sauté over medium heat until just tender. Stir in tuna, sour cream and spice blend. Remove from heat. Stir in cheddar cheese.
Spray a casserole dish with non-stick spray. Add pasta and tuna mixture to the casserole dish.  Melt remaining butter and mix into bread crumbs. Top the casserole with the breadcrumbs mixture.

Bake for 20 minutes at 375°F or until breadcrumbs are toasted and casserole is bubbly hot. 

Note: You can substitute the same amount of Garlic Lovers spice blend for the Shrimp Scampi blend.
