Friday’s Fried Fish

Ingredients

Vegetable oil, for frying
1½ lbs. fresh cod (or other white fish)
2 teaspoons Healthy Solutions Seafood Rub
½ cup all-purpose flour
2 eggs
2 tablespoons cold water
2 cups plain Panko bread crumbs

Directions

In a shallow dish, mix flour and Seafood Rub together. In medium bowl, beat together the eggs and water.  Place the bread crumbs in large resealable plastic bag.

In a skillet, heat about 2 inches of oil to 350°F. Meanwhile, coat both sides of the fish fillets with flour and spice mixture, then dip into egg mixture, letting excess drip back into bowl. Place 1 or 2 pieces of fish at a time in plastic bag with bread crumbs; seal bag and shake to coat completely.
Fry fish in hot oil for about 4 minutes, turning once, until golden brown. Drain on paper towels. Serve hot.

Notes: Regular breadcrumbs work as well as Panko if that is what you have on hand. Try substituting dark beer for the water.
