4 center-cut salmon fillets (about 6 oz each)
1 cup plain Panko bread crumbs
4 tbsp. butter
1 packet Healthy Solutions Herb Crusted Tilapia spice blend
Preheat oven to 400℉. For topping, melt 3 tbsp. butter and mix in the spice blend and bread crumbs. Set aside.
Pat the salmon dry with a paper towel. Heat remaining 1 tbsp. of butter in a large oven safe skillet on medium-high heat. Place salmon in pan so that pieces are not touching and sear the salmon, flesh side down, for about 2 minutes. Turn each salmon piece over and top each fillet with the crumb mixture. Place the skillet in the oven and bake for 8-12 minutes, until the fish flakes with a fork.
