Cajun Salmon Burgers


For Salmon Burgers:
1 1/2 pounds fresh salmon fillet
2 tsp Healthy Solutions Cajun Seafood blend
1 large egg, whisked
1/2 cup plain Panko breadcrumbs
2 tbsp. olive oil
4 sandwich buns
For Seasoned Mayo: 
1 tsp Healthy Solutions Salmon with Dill blend
1/2 cup mayonnaise


Place salmon in food processor and pulse 4-5 times. Be careful not to over pulse the salmon; you want the salmon to be small chunks, not a paste. Remove salmon from food processor and place in a large bowl. Add the Healthy Solutions Cajun Seafood blend, eggs and breadcrumbs. Mix with spoon to combine.  Portion into 4 burgers. 

Add oil to a skillet and set temperature to medium. Add the salmon burgers and cook for 2-3 minutes per side, allowing them to brown.

Meanwhile, mix 1/2 cup mayonnaise and 1 tsp. Healthy Solutions Salmon with Dill blend. Set aside. Refrigerate any remaining.

Remove salmon burgers from skillet.  Serve on toasted buns with lettuce and dill mayo. 

Note: For a milder tasting burger, use the Salmon With Dill blend in place of the Cajun blend.
