Baked Shrimp Quesadillas

Ingredients

4 flour tortillas
1 lb. medium raw shrimp, shelled and deveined
1 packet Healthy Solutions Authentic Chili/Tacos
2 tbsp olive oil
1/2 small onion, diced
1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
1 cup Monterey Jack cheese, grated 
Olive oil spray
Toppings: sour cream, guacamole, salsa

Directions

Preheat oven to 425℉.  Place shrimp in a bowl. Add olive oil and enough Authentic Chili/Tacos seasoning to completely coat the shrimp.  Heat remaining oil in skillet over medium heat. Add onion and peppers; cook for 1-2 minutes, until they start to soften. Add shrimp and cook an additional 
1 minute, stirring occasionally.  Remove from skillet to a bowl and set aside. 

Spray baking sheet with olive oil spray. Place tortillas on baking sheet. Add shrimp and veggies to one side of tortilla, topping with shredded cheese.  Fold tortilla in half.   Press lightly together with spatula.
Bake for 8 minutes, until cheese is melted and tortilla is at desired crispness. 

Serve with sour cream, guacamole and salsa.

Note: This filling makes a great taco!
