Cajun Shrimp Sliders


1 lb raw shrimp, shelled and deveined
¼ cup olive oil
1 tbsp. Healthy Solutions  Cajun Seafood
Slider Rolls
Toppings: Sliced avocado, Lettuce leaves, Sliced tomato, Mayonnaise (see recipe below)


Place raw shrimp in a bowl. Add olive oil and Cajun seasoning; combine until well coated. Coat a skillet with non-stick spray. Add shrimp to skillet and cook 1-2 minutes per side, turning once, on medium heat. Be careful not to overcook the shrimp. Remove shrimp from skillet.

Grill or toast rolls if desired. Place a lettuce leaf on bottom half of roll. Layer shrimp, avocado, tomato. Spread mayo on top half of roll.

Note: A great mayo for this can be made by adding a teaspoon of Delicate Dill to 1/2 cup of your favorite mayonnaise.  The dill mayo has a fresh favor that helps tone down the heat from the cajun seasoning.
