4 large portobello mushrooms, stems and gills removed
1/4 cup Crumbled blue cheese
4 jarred Roasted Red Peppers, sliced
1/3 cup olive oil
1 tbsp. Healthy Solutions Ultimate Burger spice blend
4 brioche buns, sliced in half and toasted
Lettuce and Tomato slices, if desired
Preheat oven to 375°. In a medium bowl, whisk together olive oil and Ultimate Burger spice blend. Dip mushroom caps in the mixture and place mushrooms face-down on a baking sheet. Bake for 20 minutes, until softened.
Top with blue cheese and roasted peppers. Add lettuce and tomato, if desired, and serve.
Note: These are great grilled outside or on your stove top in a cast iron pan.
