1 lb scallops
4-5 tbsp olive oil
2 tbsp Healthy Solutions Spice Blends Lemon Pepper Scallops
12 Asparagus spears
Black Pepper, to taste
Pre-heat oven to 425°F. Snap off the dry ends of the asparagus. Spread the asparagus in a single layer on a baking sheet and drizzle lightly with olive oil. Sprinkle with black pepper, as desired. Roast in oven for 15 to 20 minutes.
Rinse and pat dry scallops with a paper towel. Mix olive oil and seasoning in a bowl. Add scallops and toss to completely cover with mixture. Add a small amount of olive oil to the bottom of a saute pan. Add scallops, and turn heat to medium-high. Cook scallops, turning often, for up to 4 minutes, or until opaque and tender.
Note: We recommend preparing the asparagus first and getting it into the oven. Once in the oven, prepare scallops and saute them so that both the asparagus and scallops are ready to be plated at the same time.
