1 – 1½ lbs. Haddock or other white fish
3 tbsp. grated parmesan
½ cup mayonnaise
3 tbsp. Healthy Solutions Spice Blends Encrusted Haddock
¼ cup plain Panko crumbs
1 crostini bread sliced into ¼” rounds
1-2 tbsp. olive oil
Preheat oven to 375 °F. Mix grated parmesan, mayonnaise, Panko crumbs and Encrusted Haddock spice blend together. Sprinkle or spray oven safe dish with olive oil. Place fish, skin side down, into baking dish. Spread mixture evenly over fish. Drizzle with olive oil. Bake for 12-15 minutes or until fish is flaky and opaque. Turn oven to broil for 1 minute, until topping is golden brown and crispy. Remove fish from oven. Toast crostini under broiler until golden brown. Remove from oven and spread fish onto Crostini rounds. Top with additional grated parmesan, if desired. Serve warm or at room temperature.
