1 – 1½ lbs. Haddock or other white fish
3 tbsp. grated parmesan
½ cup mayonnaise
3 tbsp. Healthy Solutions Spice Blends Encrusted Haddock
¼ cup plain Panko crumbs
1 crostini bread sliced into ¼” rounds
1-2 tbsp. olive oil
Preheat oven to 375 °F. Mix grated parmesan, mayonnaise, Panko crumbs and Encrusted Haddock spice blend together.
Sprinkle or spray an oven safe dish with olive oil or nonstick spray. Place the fish, skin side down, into the baking dish. Spread the mixture evenly over the fish. Drizzle with olive oil.
Bake for 12-15 minutes or until fish is flaky and opaque.
Remove fish from oven. Turn oven from bake to broil. Toast crostini under broiler until golden brown. Remove from oven and spread fish onto Crostini rounds. Top with additional grated parmesan, if desired. Serve warm or at room temperature.
