2 oz. Gouda cheese (more is good too!)
1/3 cup Mushrooms, sliced (any kind you like)
1/4 Vidalia onion, sliced
2 slices Rye bread
1 tbsp. olive oil
2 tbsp. butter (at room temperature)
1 tsp. Garlic Lovers spice blend
Put 1 tbsp. olive oil and 1 tbsp. butter into a non-stick skillet. Turn heat to medium. Add onions, mushrooms and Garlic Lovers spice blend; cook until soft and golden brown, stirring occasionally. Remove veggies from skillet and set aside.
Turn heat to LOW setting. Spread one side of each slice of rye bread with remaining butter. Place one slice, butter side down, into skillet. Layer cheese, veggies, and another layer of cheese. Top with the second slice of rye bread, butter side up.
Grill on low heat, turning once, until the cheese is completely melted. Be patient. If heat is too high, the bread will brown too fast and the cheese will not melt completely.
Remove from skillet to plate; slice in half and enjoy!
Notes: If you bring the cheese to room temperature, it will melt better and more evenly.
Our Versatile Veggies spice blend is a great substitute for Garlic Lovers in this recipe.
