For the chicken:
6-8 chicken thighs and drumsticks (about 2 lbs.)
1/4 tsp. black pepper
2 tbsp. butter
For the Cream Sauce:
2 tbsp. unsalted butter
2 tbsp. Shrimp Scampi spice blend
2 tbsp. all purpose flour
1 cup chicken broth
1/4 cup grated Parmesan
1/2 cup heavy cream
Preheat oven to 375℉. In a large skillet, melt 2 tbsp. butter over medium/high heat. Add chicken, skin-side down, and sear each side for about 2 minutes until golden brown. Remove chicken from skillet and set aside.
Using the same skillet, melt remaining 2 tbsp. butter over medium heat. Add flour and whisk for about 1 minute, until lightly browned. Add in chicken broth and whisk until fully incorporated into flour. Stir in Shrimp Scampi seasoning. Slowly add heavy cream and Parmesan, whisk until slightly thickened.
Return chicken into the skillet, placing it on top of the parmesan cream sauce. Bake in 375℉ oven for 30-35 minutes or until chicken is cooked through and skin is crispy. Garnish with additional parmesan cheese, if desired.
