Zucchini, Broccolini and Tomato Quiche


1 cups zucchini, sliced thin
½ cup broccolini, chopped
½ cup yellow onion, diced
2 tablespoons olive oil
1 tomato, sliced
4 tsp Italian Meatballs spice blend
½ cup mozzarella
½  cup grated parmesan
3 eggs, beaten
1 cup milk
Frozen or refrigerated pie crust (Great as crustless too!)


Slice zucchini into very thin slices. Chop broccolini into bite size pieces. Spray a pie plate with non-stick spray or butter. Arrange zucchini in pie plate; layer with broccolini and then arrange sliced tomato on top. Add Italian Meatballs spice blend and top with shredded cheese. Combine eggs and milk together and pour on top. Bake at 350°F for 30-45 minutes or until set.
