1 lb boneless NY Strip
1/2 cup Olive Oil
1 packet Authentic Chili/Tacos seasoning
2 Medium Onions, sliced
1 Red Bell Pepper, sliced
1 Green Bell Pepper, sliced
1 cup Shredded Monterey Jack
In a dish, mix together olive oil and entire packet of Authentic Chili/Tacos seasoning. Pour half of the mixture into a separate dish. In one dish, place the steak, turning it over to coat. In the second dish, place all the veggies, turning to coat. Cover the dishes with plastic wrap and refrigerate for an hour.
Heat a heavy skillet (cast iron works great) over medium-high heat and drizzle in some oil. Add the vegetables and cook until they are slightly firm. Remove to a plate and set aside. Heat the same same skillet over high heat. Cook the meat for about 2 minutes per side until medium rare. Remove and allow to rest on a cutting board for 10 minutes.
Serve with salsa, sour cream and shredded cheese. Garnish with cilantro, if desired.
