1 lb raw shrimp, shelled and deveined
1 tbsp olive oil
3 tsp. Healthy Solutions Spice Blends Cajun Seafood
Wooden or metal skewers
Toppings: Sliced avocado, Lettuce leaves, Sliced tomato, Mayonnaise
Soak wooden skewers in water for at least 30 minutes (or overnight) before using to avoid burning them on the grill. Place raw shrimp in a bowl. Add olive oil and Cajun seasoning; combine until well coated. Put shrimp on the skewers. Place on a hot grill until opaque and cooked through, turning once, for about 2 minutes per side. Remove shrimp from grill and skewers.
Grill or toast rolls if desired. Place a lettuce leaf on bottom half of roll. Layer shrimp, avocado, tomato. Spread mayo on top half of roll.
Note: A great mayo for this can be made by adding a teaspoon of Healthy Solutions Salmon with Dill to 1/2 cup of your favorite mayonnaise. The dill mayo has a fresh favor that helps tone down the heat from the cajun seasoning.
