1 whole chicken (4-5 lbs)
3 tbsp vegetable oil
3-4 tbsp Healthy Solutions Pork & Poultry Rub
1/2 can beer
Rub chicken lightly with vegetable oil. Sprinkle inside and out of chicken generously with Healthy Solutions Pork & Poultry Rub. Set aside.
Start your grill, setting the heat to medium high on one side. Leave heat off on the other side of the grill.
If beer can is not open, open it and drink or empty the beer until the can is about 1/2 full. Place beer can on a solid surface. Grabbing a chicken leg in each hand, place the chicken cavity over the beer can. Place on one side of the grill.
Cook the chicken over medium-high, indirect heat (the side with the burner off, with the grill cover on, for about 1 hour or until the internal temperature registers 165℉ in the breast area and 180℉ in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.
