6 cups mashed potatoes (leftover works great)
1/4 cup red pepper, diced
1/4 cup green pepper, diced
1/8 cup green olives, chopped
1/8 cup black olives, chopped
1/3 cup cheddar cheese, shredded
2 tbsp Healthy Solutions Spice Blends Shrimp Scampi
3 tbsp skim milk
Preheat oven to 350°. Prepare a 9×12 glass baking dish with nonstick spray. In a large bowl, combine all ingredients. Press mixture evenly into pan.
Bake for 15-20 minutes or until top starts to become golden brown. Remove from oven and let stand for 10 minutes to cool. Slice into squares and serve. Great topped with a dollop of sour cream or greek yogurt.
