Black Beans and Corn Salad

Black Bean and Corn Salad (2)

Direct from our HSSB Test Kitchen – Try this no salt/no sugar spice blend on this deliciously fresh summer salad.

Prep Time: 10 min                Cook Time: None   
Serves: 4                                 

INGREDIENTS:
1 15 oz. can black beans, rinsed and drained
2 cups canned corn (if frozen, thaw first)
1 avocado, diced
1 small red bell pepper, seeded and chopped
½ red onion, chopped
2 tbsp. olive oil
2 tsps. Healthy Solutions Spice Blends Chili/Tacos blend
10 grape tomatoes, quartered
½ lime

DIRECTIONS:
Combine all ingredients in a bowl. Let stand for about 15 minutes so flavors combine. Squeeze lime juice into mixture. Toss and serve. Refrigerate until ready to serve.
